Count in advance! Early on in your event planning, do a realistic count of how many people you can expect to recruit. How many did you have in the past? What has changed since then to increase or decrease? How many table captains or co-hosts do you have? How many can each be expected to recruit? This should give you a realistic place to start. You can go up (or down) from there.
